2 large chicken breasts, boneless and skinless

1 cup sweet chili sauce

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

4 large lettuce leaves (such as romaine or butter lettuce)

1 medium cucumber, thinly sliced

1 carrot, julienned

1/4 cup fresh cilantro, chopped

1 tablespoon sesame seeds (for garnish)

Toothpicks (optional, for securing rolls)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the sweet chili sauce, soy sauce, honey, sesame oil, garlic powder, and ginger powder. This will be your marinade.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, making sure it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat. Brush lightly with oil to prevent sticking.

        Grill the Chicken: Remove the chicken from the marinade and discard any leftover marinade. Season the chicken with salt and pepper to taste. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes.

          Slice the Chicken: Once the chicken has rested, slice it thinly across the grain to create strips.
