1 cup rolled oats

1/2 cup finely grated carrots

1/4 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup

1/4 cup shredded coconut (unsweetened or sweetened, as per preference)

1/4 cup chopped walnuts or pecans (lightly toasted, optional)

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp ground nutmeg

A pinch of salt

Optional: 1/4 cup raisins or dried cranberries for added sweetness

Prepare the Ingredients: Start by finely grating the carrots using a box grater or food processor. Measure out all other ingredients while preheating your oven to 350°F (175°C) if you're toasting nuts.

    Toast the Nuts: (if using) Spread walnuts or pecans on a baking sheet and toast in the preheated oven for about 5-7 minutes or until fragrant. Allow them to cool, then chop them coarsely.

      Combine the Ingredients: In a large mixing bowl, combine the rolled oats, grated carrots, almond butter, honey or maple syrup, shredded coconut, and toasted nuts.

        Spice it Up: Add vanilla extract, ground cinnamon, nutmeg, and a pinch of salt to the mixture. If you like a little extra sweetness, fold in the raisins or dried cranberries at this point.
