1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chopped fresh parsley (for garnish)

For the Sauce:

1 cup honey

1/2 cup soy sauce

1/4 cup ketchup

2 cloves garlic, minced

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional for heat)

1 tablespoon apple cider vinegar

Instructions
 

Prepare the Meatballs: In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and black pepper. Mix gently until just combined.

    Form the Meatballs: Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper. This will make it easier to transfer them to the crockpot later.

      Make the Sauce: In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, garlic powder, red pepper flakes (if using), and apple cider vinegar until well combined.

        Combine in the Crockpot: Place the formed meatballs into the crockpot. Pour the honey-garlic sauce over the meatballs, ensuring they are well coated.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The meatballs should be cooked through and tender by the end of cooking.

            Serve: Once cooked, gently stir the meatballs in the sauce to re-coat them. Serve hot, garnished with fresh parsley over rice, pasta, or as an appetizer with toothpicks on the side.
