Ingredients

1 cup unsweetened shredded coconut

1 cup almond flour

½ cup almond butter (or any nut butter of your choice)

¼ cup honey or maple syrup

¼ tsp vanilla extract

¼ tsp sea salt

¼ cup mini dark chocolate chips (optional)

2 tbsp chia seeds (optional, for added texture and nutrition)

Additional shredded coconut for rolling (optional)

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the unsweetened shredded coconut, almond flour, sea salt, and chia seeds (if using). Stir well until evenly mixed.

Combine Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and uniform.

Combine Both Mixtures: Pour the wet ingredients into the dry mixture and stir well until everything is thoroughly combined. If using, fold in the mini dark chocolate chips.

Chill the Mixture: Cover the mixture and refrigerate for about 30 minutes. This helps to firm it up and makes it easier to handle.

Form the Balls: Once chilled, use your hands to scoop out about a tablespoon of the mixture. Roll it into a ball and place it on a plate. Repeat with the remaining mixture.

Roll in Coconut: If you wish, roll each ball in additional shredded coconut for an extra touch of flavor and aesthetics.

Refrigerate Once More: Place the finished snack balls back in the refrigerator to firm up for another 15-30 minutes before serving.

Serve and Enjoy: Enjoy these Sweet Almond Coconut Snack Balls as a quick snack or a delightful dessert! Store leftovers in an airtight container in the refrigerator for up to a week.
