1 lb (450g) carrots, peeled and cut into 1/4-inch coin slices

2 tablespoons olive oil

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)

1 teaspoon garlic powder

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)
