Sun-Dried Tomato Chicken Couscous

1 lb boneless, skinless chicken breasts

1 cup couscous

2 cups chicken broth

1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)

1/4 cup red onion (finely chopped)

2 cloves garlic (minced)

1/2 cup fresh spinach (chopped)

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

2 tbsp olive oil

1/4 cup feta cheese (crumbled, for garnish)

Fresh basil leaves (for garnish)

Instructions
 

Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and dried oregano. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until fully cooked through (internal temperature should reach 165°F). Remove from skillet and set aside to rest.

    Sauté Aromatics: In the same skillet, reduce heat to medium and add the chopped red onion. Sauté for 2-3 minutes until softened, then add the minced garlic and red pepper flakes. Cook for an additional 30 seconds until fragrant.

      Prepare Couscous: In a medium pot, bring 2 cups of chicken broth to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let sit for about 5 minutes until the couscous absorbs the liquid. Fluff with a fork.

        Combine Ingredients: Slice the cooked chicken into bite-size pieces and return to the skillet with the sautéed onions and garlic. Add in the chopped sun-dried tomatoes and fresh spinach, stirring for 2-3 minutes until the spinach wilts.

          Mix Everything Together: Transfer the fluffed couscous into the skillet and mix everything together until well combined. Taste and adjust seasoning with additional salt, pepper, and herbs if desired.

            Serve: Plate the chicken couscous mixture and garnish with crumbled feta cheese and fresh basil leaves. Enjoy warm!
