1 cup mushrooms, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon honey or maple syrup (optional, for sweetness)

2 green onions, chopped

Sesame seeds, for garnish

Prep the Veggies: Wash and chop all the vegetables as indicated in the ingredients list. Having everything ready will make the stir fry process quick and efficient.

    Heat the Oils: In a large wok or non-stick skillet, heat the olive oil over medium-high heat. Add the sesame oil for added flavor.

      Sauté Aromatics: Once the oil is hot, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant, ensuring not to let them burn.

        Cook the Veggies: Add the sliced mushrooms first and stir for about 2 minutes until they start to wilt. Then, add the sliced bell peppers, zucchini, carrots, and snap peas. Stir-fry all the vegetables for about 5-7 minutes, or until they are tender yet still crisp.
