4 medium-sized zucchinis

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cooked rice (white or brown)

1 can (14.5 oz) diced tomatoes, drained

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon crushed red pepper flakes (optional)

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnishing)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Using a spoon, scoop out the flesh to create boats, leaving about ¼ inch of zucchini flesh intact. Reserve the scooped-out zucchini flesh.

      Cook the Filling: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add Beef and Season: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Drain any excess fat.

          Combine Ingredients: Stir in the reserved zucchini flesh, diced tomatoes, cooked rice, oregano, basil, crushed red pepper flakes (if using), salt, and pepper. Mix well and let it cook for about 5-7 minutes until everything is heated through.
