Stuffed Fruit Pizza Bell Peppers

4 large bell peppers (any color)

1 cup Greek yogurt

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon cinnamon

1 cup mixed fresh fruits (e.g., strawberries, blueberries, kiwi, banana)

¼ cup granola (for topping)

Fresh mint leaves (for garnish)

Instructions
 

Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

    Make the Fruit Filling: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and cinnamon. Stir until smooth and well-mixed.

      Add Fresh Fruits: Gently fold in the mixed fresh fruits into the yogurt mixture. Be careful not to mash the fruit too much; you want to maintain some chunks for texture.

        Stuff the Peppers: Spoon the yogurt and fruit mixture into each bell pepper, filling them generously. Leave a little space at the top to allow for any overflow while baking.

          Bake the Peppers: Cover the baking dish with foil (this helps retain moisture) and bake in the preheated oven for about 25-30 minutes. Remove the foil in the last 10 minutes for a slightly roasted top.
