Stuffed Avocados with Tuna Salad

2 ripe avocados

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup diced celery

1/4 cup diced red bell pepper

2 tablespoons chopped green onions

1 tablespoon capers, drained and chopped (optional)

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Prepare the Avocados: Slice the avocados in half lengthwise, removing the pit. Carefully scoop out a small portion of the flesh to create a larger cavity for the filling (you can chop the scooped-out avocado and add it to the salad if you like).

    Make the Tuna Salad: In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Mix well until all ingredients are incorporated.

      Add the Veggies: Fold in the diced celery, red bell pepper, green onions, and capers (if using) into the tuna mixture. Season with salt and pepper to taste.
