1 package (14.1 oz) of plain store-bought ladyfingers or sugar cookies

1 cup strawberry jam or preserves

Fresh mint leaves (for garnish, optional)

Prepare the Strawberries: In a medium bowl, combine sliced strawberries and granulated sugar. Toss them well to ensure the sugar coats every piece. Let the strawberries sit for about 30 minutes at room temperature, allowing them to release their juices and create a flavorful syrup.

    Whip the Cream: In a large mixing bowl, pour in the heavy whipping cream. Add the powdered sugar and vanilla extract. Using an electric mixer, whip the cream on medium-high speed until stiff peaks form, about 3-5 minutes. Be careful not to overwhip.

      Assemble the Icebox Cake: In a rectangular or square dish (about 9x9 inches or similar), start layering the ingredients. Begin with a thin layer of whipped cream on the bottom.
