STRAWBERRY LEMON BLONDIES

1 cup (2 sticks) unsalted butter, melted

1 ½ cups packed brown sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

2 cups all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup fresh strawberries, hulled and chopped

½ cup white chocolate chips (optional)

½ cup powdered sugar (for frosting, optional)

1 tablespoon lemon juice (for frosting, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and brown sugar. Whisk until smooth. Add the eggs one at a time, followed by vanilla extract and lemon zest, mixing well after each addition.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

          Fold in Strawberries: Gently fold the chopped strawberries and white chocolate chips (if using) into the batter until evenly distributed.

            Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

              Cool: Once baked, remove from the oven and allow to cool in the pan for about 15 minutes, then lift the blondies out using the parchment overhang and let cool completely on a wire rack.

                Optional Frosting: If you desire a sweet topping, mix the powdered sugar and lemon juice in a small bowl until smooth. Drizzle or spread it over the cooled blondies.
