1 pound fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon lemon juice

1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

Fresh mint leaves (for garnish)

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, and vanilla extract. Stir to coat the strawberries evenly, then set aside to macerate for about 15 minutes. This will help draw out the juices and enhance their sweetness.

    Make the Whipped Cream: In a large mixing bowl, using an electric mixer, beat the heavy whipping cream on medium speed until it begins to thicken.
