Ingredients

8 slices of thick-cut brioche or challah bread

8 oz cream cheese, softened

1/3 cup powdered sugar

1 tsp vanilla extract

1 cup fresh strawberries, hulled and sliced

3 large eggs

1/2 cup milk

1 tsp ground cinnamon

1/4 tsp nutmeg

1/2 tsp vanilla extract (for the egg mixture)

Butter, for cooking

Maple syrup, for serving

Whipped cream (optional, for topping)

Instructions

Prepare the Filling: In a mixing bowl, combine softened cream cheese, powdered sugar, and 1 tsp vanilla extract. Mix until smooth and creamy. Gently fold in the sliced strawberries. Set aside.

Assemble the French Toast: Take one slice of brioche bread and spread a generous amount of the cream cheese and strawberry filling on top. Place another slice of bread on top to create a sandwich. Repeat this process until all slices are filled and stacked.

Make the Egg Mixture: In a separate bowl, whisk together the eggs, milk, cinnamon, nutmeg, and 1/2 tsp vanilla extract until fully combined.

Soak the Sandwiches: Heat a large skillet or griddle over medium heat. Dip each sandwich into the egg mixture, allowing it to soak briefly on each side.

Cook the French Toast: Melt a tablespoon of butter in the skillet. Once melted, place the soaked sandwiches in the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy.

Serve: Remove the French toast from the skillet and serve hot. Drizzle with maple syrup and top with whipped cream, if desired. Add extra sliced strawberries on top for a beautiful presentation.
