Ingredients

1 cup rolled oats

1 cup unsweetened almond milk (or any milk of choice)

1/2 cup Greek yogurt (plain or vanilla)

1 tablespoon maple syrup (or honey)

1/2 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1 tablespoon chia seeds (optional for added thickness)

1/4 cup crushed graham crackers (for topping)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Base: In a medium bowl, combine the rolled oats, almond milk, Greek yogurt, maple syrup, vanilla extract, and chia seeds. Stir until well mixed and the oats are fully coated with the wet ingredients.

Layer the Strawberries: Add half of the sliced strawberries to the oat mixture and gently fold them in to incorporate the flavors. Reserve the other half for topping later.

Transfer to Jars: Divide the mixture evenly into two jars or airtight containers. Make sure to leave some space at the top for toppings.

Chill in the Fridge: Cover the jars with lids and place them in the refrigerator. Let the mixture sit overnight (or at least 4 hours) to allow the oats to soften and absorb the flavors.

Add Toppings: In the morning (or when ready to serve), remove the jars from the fridge, and top each serving with the reserved sliced strawberries, crushed graham crackers, and a drizzle of maple syrup if desired.

Garnish: For a touch of freshness, add a sprig of mint on top of each jar before serving.

Enjoy: Dig in with a spoon and enjoy your delightful Strawberry Cheesecake Overnight Oats!
