1 medium head of cauliflower, cut into florets

3 tablespoons cornstarch

2 tablespoons vegetable oil

Salt and pepper to taste

1/4 cup honey

3 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon crushed red pepper flakes (optional)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the cauliflower: In a large mixing bowl, combine the cauliflower florets with cornstarch, vegetable oil, salt, and pepper. Toss until all florets are evenly coated.

      Roast the cauliflower: Spread the coated cauliflower in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

        Make the sauce: While the cauliflower is roasting, prepare the sticky honey garlic sauce. In a small saucepan over medium heat, add honey, minced garlic, soy sauce, rice vinegar, sesame oil, and crushed red pepper flakes (if using). Bring to a simmer and let cook for 3-4 minutes, stirring frequently. The sauce should slightly thicken.

          Combine: Once the cauliflower is finished roasting, remove it from the oven and transfer the florets to a large mixing bowl. Pour the honey garlic sauce over the cauliflower and toss until all pieces are evenly coated.

            Return to oven (optional): For an extra sticky finish, return the coated cauliflower to the oven for an additional 5-10 minutes, allowing the sauce to caramelize lightly.

              Garnish and serve: Remove from the oven and garnish with sliced green onions and sesame seeds. Serve warm as a delicious appetizer or side dish.
