Ingredients

14 oz firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon maple syrup

1 teaspoon sesame oil

1 teaspoon rice vinegar

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 red bell pepper, diced

2 green onions, chopped

1 cup shredded carrots

1 head of butter lettuce, leaves separated

Sesame seeds for garnish

Fresh cilantro leaves for garnish (optional)

Instructions

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, mix the soy sauce, hoisin sauce, maple syrup, sesame oil, and rice vinegar to create a marinade. Add the tofu cubes and gently toss to coat. Let it marinate for at least 15 minutes.

Coat the Tofu: After marinating, sprinkle the cornstarch over the tofu cubes, ensuring they are evenly coated. This will give the tofu a crispy texture when cooked.

Cook the Tofu: Heat the vegetable oil in a non-stick skillet over medium-high heat. Add the coated tofu cubes and cook for about 7-10 minutes, turning occasionally until they are golden brown and crispy on all sides.

Add Vegetables: Once the tofu is cooked, add the diced red bell pepper, and shredded carrots to the skillet. Stir-fry everything together for an additional 2-3 minutes until the vegetables are slightly tender yet still crisp.

Assemble the Boats: Take the lettuce leaves and spoon the sticky glazed tofu and vegetable mixture into each leaf, creating little boats.

Garnish and Serve: Top the filled lettuce boats with chopped green onions, a sprinkle of sesame seeds, and fresh cilantro leaves if desired. Serve immediately while the tofu is still warm and enjoy!
