Spinach & Artichoke Chicken Twists

2 cups fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and chopped

1 cup cooked and shredded chicken breast

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon lemon juice

Salt and pepper, to taste

1 package of refrigerated puff pastry (2 sheets)

1 egg, beaten (for egg wash)

Sesame seeds (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Filling: In a large mixing bowl, combine the chopped spinach, chopped artichoke hearts, shredded chicken, softened cream cheese, sour cream, Parmesan cheese, mozzarella cheese, garlic powder, onion powder, lemon juice, salt, and pepper. Mix thoroughly until well combined.

      Roll Out Puff Pastry: On a lightly floured surface, roll out each sheet of puff pastry to approximately 1/4 inch thickness. Cut each sheet into rectangles, about 4 inches by 3 inches.

        Fill the Pastry: Place a generous tablespoon of the spinach and artichoke chicken mixture in the center of each rectangle. Ensure to leave space around the edges for sealing.

          Twist and Seal: Fold the pastry over the filling to create a triangle and then twist the edges together for a fun shape. Press down on the edges with a fork to seal them and create a decorative print. Brush the top of each twist with the beaten egg for a golden finish.

            Bake: Arrange the twists on the prepared baking sheet, spacing them out evenly. If desired, sprinkle sesame seeds on top. Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
