Spinach Artichoke Air Fryer Quesadillas

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and roughly chopped

1 cup cream cheese, softened

1/2 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

Cooking spray or olive oil

Instructions
 

In a mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, mozzarella cheese, and Parmesan cheese. Mix well until all ingredients are evenly incorporated.

    Add the garlic powder, onion powder, salt, and pepper to the mixture. Stir to combine and adjust seasoning according to taste.

      Preheat your air fryer to 380°F (193°C).

        Lay one flour tortilla on a flat surface. Spoon a generous amount of the spinach and artichoke mixture onto half of the tortilla, spreading it evenly. Fold the other half of the tortilla over the filling to create a half-moon shape.

          Spray the air fryer basket with cooking spray or brush lightly with olive oil. Place the quesadilla in the basket. You may need to cook them in batches, depending on the size of your air fryer.

            Air fry the quesadilla for 5-7 minutes, flipping halfway through, or until the tortillas are golden brown and crispy.

              Once cooked, carefully remove the quesadilla from the air fryer and allow it to cool for a minute before cutting into wedges.

                Repeat with the remaining tortillas and filling mixture.

                  Serve warm with salsa or guacamole for dipping!
