6 large eggs

1 cup fresh spinach, roughly chopped

1/2 cup goat cheese, crumbled

1/4 cup milk (or cream for a richer taste)

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh herbs (like basil or parsley) for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Veggies: In a medium oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until soft and translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add Spinach: Toss in the chopped spinach and cook, stirring occasionally, until wilted, about 2-3 minutes.

        Whisk the Eggs: In a mixing bowl, whisk together the eggs, milk, salt, pepper, and red pepper flakes (if using) until well combined.

          Combine Ingredients: Pour the egg mixture over the sautéed vegetables in the skillet. Using a spatula, gently stir to distribute the spinach and onions evenly. Then sprinkle the crumbled goat cheese on top.
