Spinach and Artichoke Pasta Bake

12 oz (340g) pasta (penne or fusilli)

1 tablespoon olive oil

3 cloves garlic, minced

1 cup onion, diced

1 cup frozen spinach, thawed and drained

1 can (14 oz) artichoke hearts, drained and chopped

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon lemon juice

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

½ cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and diced onion, sauté until fragrant and translucent (about 3-4 minutes).

        Combine Spinach and Artichokes: Stir in the thawed spinach and chopped artichoke hearts to the skillet, cooking for an additional 2-3 minutes until heated through.
