Ingredients
  

For the Sushi Rice:

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

For the Spicy Tuna:

8 oz sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust for spice level)

1 teaspoon sesame oil

1 tablespoon green onions, finely chopped

Salt, to taste

For the Avocado Layer:

1 ripe avocado, mashed

1 teaspoon lime juice

Salt and pepper, to taste

For Assembly:

1 sheet of nori, cut into squares (optional)

Sesame seeds, for garnish

Additional green onions, finely chopped, for garnish

Soy sauce, for serving

Instructions
 

Prepare the Sushi Rice:

    - Rinse the sushi rice under cold water until the water runs clear.

      - Combine the rinsed rice and water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and all the water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

        - In a small bowl, combine the rice vinegar, sugar, and salt, stirring until dissolved. Gently fold this mixture into the cooked rice, using a spatula to avoid mashing the grains. Allow the rice to cool to room temperature.

          Make the Spicy Tuna:

            - In a mixing bowl, combine the diced tuna, mayonnaise, sriracha, sesame oil, and green onions. Season with salt to taste. Mix gently to avoid breaking down the tuna too much. Refrigerate until ready to assemble.

              Prepare the Avocado Layer:

                - In another bowl, mash the ripe avocado and mix in the lime juice. Season with salt and pepper to taste. Set aside.

                  Assemble the Sushi Stack:

                    - Using a round mold (or a small cup if you don’t have a mold), start layering your ingredients. Begin with a scoop of sushi rice, pressing it down lightly to form a base.

                      - Add a layer of the spicy tuna mixture on top of the rice, followed by a thin layer of the mashed avocado.

                        - Repeat the layers until you reach the top of the mold, finishing with a layer of sushi rice on top.

                          Garnish:

                            - Carefully remove the mold from the stack. If using nori, place a square at the base.

                              - Sprinkle sesame seeds and additional chopped green onions over the top for garnish.

                                Serve:

                                  - Slice the sushi stack carefully if desired, or serve whole with a drizzle of soy sauce on the side.
