For the Chicken and Noodles:

8 oz rice noodles

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tbsp vegetable oil

Salt and pepper, to taste

2 green onions, chopped

1 red bell pepper, thinly sliced

1 cup snap peas or snow peas

1 cup shredded carrots

2 cloves garlic, minced

1 tbsp fresh ginger, grated

For the Spicy Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce (or tamari for gluten-free)

3 tbsp honey or maple syrup (for a vegan version)

2 tbsp rice vinegar

1-2 tbsp Sriracha (adjust to taste)

1 tbsp sesame oil

1/4 cup warm water (to thin out the sauce)

Instructions
 

Cook the Noodles: Start by cooking the rice noodles according to package instructions. Once cooked, drain and set aside. Drizzle a little vegetable oil on them to prevent sticking.

    Prepare the Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, Sriracha, sesame oil, and warm water until smooth. Adjust the Spicy Peanut Sauce for your desired spice level; add more Sriracha if you prefer it spicier.

      Cook the Chicken: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the chopped garlic, grated ginger, red bell pepper, snap peas, and shredded carrots. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
