1 cup long-grain white rice, rinsed and drained

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

2 cups chicken broth

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

1 cup corn (frozen or fresh)

1/4 cup chopped fresh cilantro (optional, for garnish)

1 lime, cut into wedges (for serving)

Instructions
 

Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the spicy sausage, breaking it into smaller pieces with a spatula. Cook until browned and cooked through, approximately 6-8 minutes.

    Sauté Vegetables: Add the diced onion to the skillet with the sausage and sauté for about 3-4 minutes until the onion becomes translucent. Then, add the minced garlic and cook for an additional 1 minute until fragrant.

      Add Spices and Rice: Sprinkle in the smoked paprika, cumin, cayenne pepper, salt, and black pepper. Stir well, then add the rinsed rice to the skillet. Stir for about 2 minutes to toast the grains slightly.

        Combine Ingredients: Pour in the diced tomatoes with green chilies, black beans, corn, and chicken broth. Stir everything together, and bring the mixture to a gentle boil.

          Simmer: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes. The rice should absorb the liquid and become tender. Avoid lifting the lid while it's cooking to keep the steam trapped.
