For the Meatballs:

1 lb (450 g) ground beef (or ground turkey)

1/2 cup panko breadcrumbs

1/4 cup green onions, finely chopped

1/4 cup cilantro, finely chopped

1 large egg

2 cloves garlic, minced

1 teaspoon ginger, grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1/2 teaspoon black pepper

Salt to taste

For the Spicy Korean BBQ Sauce:

1/2 cup gochujang (Korean chili paste)

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

For Garnishing:

Sliced green onions

Sesame seeds

Extra cilantro (optional)

Instructions
 

Prepare the Meatball Mixture:

    - In a large mixing bowl, combine the ground beef (or turkey), panko breadcrumbs, green onions, cilantro, egg, minced garlic, grated ginger, soy sauce, sesame oil, gochujang, black pepper, and a pinch of salt.

      - Mix until all ingredients are well combined. It's best to use your hands for an even mixture.

        Form Meatballs:

          - Preheat your oven to 400°F (200°C).

            - Wet your hands slightly and take a small amount of the mixture (about 1 tablespoon) to form balls. Place them on a baking sheet lined with parchment paper. You should have around 20 meatballs.

              Bake the Meatballs:

                - Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and have a nice golden color.

                  Make the BBQ Sauce:

                    - While the meatballs are baking, prepare the spicy Korean BBQ sauce. In a saucepan over medium heat, combine the gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger.

                      - Stir well and let the mixture simmer for about 5 minutes.

                        - In a small bowl, mix the cornstarch with water, then gradually add it to the sauce while stirring to thicken it. Continue cooking for another minute until the sauce is glossy and thickened.

                          Coat the Meatballs:

                            - Once the meatballs are done baking, remove them from the oven. In a large mixing bowl, pour in the spicy Korean BBQ sauce and add the meatballs. Gently toss until the meatballs are fully covered in the sauce.

                              Serve:

                                - Transfer the coated meatballs to a serving platter. Garnish with sliced green onions, sesame seeds, and additional cilantro if desired.
