Spicy Chipotle Turkey Quesadilla Pockets

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1-2 chipotle peppers in adobo sauce, finely chopped (adjust for spice preference)

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1/2 cup fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Add Spices and Chipotle: Stir in the ground turkey, breaking it up with a spoon. Add the chopped chipotle peppers, smoked paprika, cumin, salt, and pepper. Cook until the turkey is browned and cooked through, about 8-10 minutes. Remove from heat and let cool slightly.

      Prepare the Tortillas: While the turkey mixture cools, lay out the flour tortillas on a flat surface. On one half of each tortilla, sprinkle a generous amount of cheddar and Monterey Jack cheese.

        Fill the Quesadilla Pockets: Spoon an equal amount of the turkey mixture over the cheese on each tortilla half. Top with additional cheese for extra gooeyness before folding the tortillas over to create a half-moon shape.

          Cook the Quesadilla Pockets: In the same skillet, add a little more olive oil if necessary. Place the folded quesadilla pockets in the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy, and the cheese has melted.

            Serve: Remove from skillet and let rest for a minute. Cut each quesadilla pocket into thirds, garnish with fresh cilantro, and serve alongside sour cream and salsa for dipping.
