Ingredients

1 lb boneless, skinless chicken breasts

2 tablespoons Cajun seasoning (adjust to taste)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

8 oz fettuccine pasta

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

Season the Chicken: While the pasta cooks, season the chicken breasts evenly with the Cajun seasoning, salt, and pepper, ensuring the flavors penetrate the meat.

Cook the Chicken: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove from the skillet and allow to rest before slicing.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally. Gradually whisk in the grated Parmesan cheese until smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Combine: Slice the cooked chicken into strips and add it back to the skillet with the Alfredo sauce. Gently fold in the cooked fettuccine, ensuring the pasta is well-coated. For an extra kick, add red pepper flakes at this stage.

Serve: Plate the Spicy Cajun Chicken Alfredo, garnishing with freshly chopped parsley for a pop of color. Enjoy while warm!
