Spiced Turmeric Lentil Soup

Ingredients
  

1 cup dried green or brown lentils, rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, diced

1 stalk celery, diced

2 tablespoons olive oil

1 teaspoon ground turmeric

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

6 cups vegetable broth or water

1 can (14 oz) diced tomatoes, with juice

Salt and black pepper to taste

Juice of 1 lemon

Fresh cilantro or parsley, for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 5-7 minutes until it becomes translucent. Add the minced garlic, diced carrot, and diced celery, and cook for another 3-4 minutes until the vegetables have softened.

    Add Spices: Stir in the ground turmeric, cumin, smoked paprika, and cayenne pepper. Cook for an additional 1-2 minutes until the spices are fragrant.

      Combine Lentils & Tomatoes: Add the rinsed lentils to the pot, followed by the diced tomatoes with their juice. Stir everything together to combine.

        Simmer the Soup: Pour in the vegetable broth (or water), and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the lentils are tender.

          Season and Finish: Once the lentils are fully cooked, taste the soup and season with salt and black pepper as needed. Stir in the lemon juice to add a bright freshness.

            Serve: Ladle the soup into bowls and garnish with fresh cilantro or parsley. Enjoy this comforting and nourishing soup on its own or with warm crusty bread!
