Spiced Sweet Potato Lentil Stew

2 medium sweet potatoes, peeled and diced

1 cup green or brown lentils, rinsed

1 large onion, chopped

3 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

1 can (14 oz) diced tomatoes, with juices

4 cups vegetable broth

1 can (14 oz) coconut milk

2 tablespoons olive oil

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

1/2 teaspoon ground cinnamon

Salt and black pepper to taste

Fresh cilantro, for garnish

Juice of 1 lime

Instructions
 

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion, and cook for about 5 minutes until translucent. Stir in garlic and cook for an additional minute until fragrant.

    Add Vegetables: Toss in the diced sweet potatoes, carrots, and celery. Sauté for about 5-7 minutes, allowing the vegetables to soften slightly.

      Spice it Up: Stir in the ground cumin, coriander, smoked paprika, and cinnamon. Cook for another minute to toast the spices, releasing their flavors.

        Combine Lentils and Tomatoes: Add the rinsed lentils and the can of diced tomatoes (with juices) to the pot. Stir well to combine.
