Ingredients

1 cup rolled oats

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/2 teaspoon salt

1/3 cup coconut oil, melted

1/2 cup brown sugar (packed)

1/4 cup maple syrup

1 large egg (or flax egg for vegan option)

1 teaspoon vanilla extract

1/2 cup chopped nuts (walnuts or almonds)

1/2 cup raisins or dried cranberries (optional)

1/4 cup brewed chai tea (cooled)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, ground spices (cinnamon, ginger, cardamom, cloves, nutmeg), and salt. Stir until well combined.

Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, brown sugar, maple syrup, egg (or flax egg), vanilla extract, and cooled brewed chai tea until smooth.

Combine Mixtures: Gradually pour the wet ingredients into the dry mixture, stirring until just combined. Fold in the nuts and dried fruits (if using) until evenly distributed.

Form Cookies: Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten them with the back of the spoon to form cookie shapes.

Bake: Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Serve and Enjoy: Once completely cooled, enjoy these delightful spiced chai oat cookies. They make for a perfect breakfast or snack option with a cup of tea!
