Ingredients

1 cup rolled oats

1 cup whole wheat flour

1/2 cup coconut sugar (or brown sugar)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cardamom

1/4 teaspoon ground cloves

1/2 teaspoon sea salt

1/2 cup almond butter (or peanut butter)

1/4 cup unsweetened applesauce

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1/2 cup raisins or dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, coconut sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, cardamom, cloves, and sea salt. Mix well until evenly combined.

Combine Wet Ingredients: In another mixing bowl, whisk together the almond butter, applesauce, maple syrup, and vanilla extract until smooth and creamy.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Stir until just combined. If using, fold in the raisins or dark chocolate chips at this stage for an extra treat.

Scoop the Dough: Using a tablespoon or a cookie scoop, drop rounded tablespoons of the dough onto the prepared baking sheet, leaving space between each cookie for spreading.

Flatten the Cookies: Gently flatten each cookie with the back of a spoon for a more even bake.

Bake: Bake in the preheated oven for about 12-15 minutes, or until the edges are golden brown. The cookies might seem soft when you remove them from the oven but will firm up as they cool.

Cool Down: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Once cooled, enjoy these spiced chai oat breakfast cookies with a warm cup of chai tea or your favorite morning beverage. Store any leftovers in an airtight container for up to a week.
