Spaghetti Squash and Meatball Bake

1 medium spaghetti squash

1 lb ground beef (or turkey for a lighter option)

1 cup breadcrumbs (gluten-free if preferred)

1/2 cup grated Parmesan cheese

1/2 cup fresh parsley, chopped

1 large egg

2 cloves garlic, minced

1/2 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Extra virgin olive oil for drizzling

Fresh basil leaves for garnish (optional)

Prepare the Spaghetti Squash: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and sprinkle with salt and pepper. Place the halves cut-side down on a baking sheet lined with parchment paper. Bake for 30-40 minutes or until the flesh is tender and can be easily shredded with a fork.

    Make the Meatballs: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated. Use your hands to form the mixture into meatballs, about 1 to 1.5 inches in diameter.

      Brown the Meatballs: In a large skillet, heat a drizzle of olive oil over medium heat. Add the meatballs in batches and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.

        Assemble the Bake: Once the spaghetti squash is cooked, carefully scrape out the strands with a fork and transfer them into a large mixing bowl. Add 1 cup of marinara sauce to the spaghetti squash and mix until well coated.

          Layer the Ingredients: In a baking dish, spread half of the spaghetti squash mixture on the bottom. Top it with half of the meatballs and 1/2 cup of shredded mozzarella cheese. Repeat with the remaining spaghetti squash, meatballs, and finish off with the remaining mozzarella cheese.

            Bake: Pour the remaining marinara sauce over the top of the bake, ensuring to cover the meatballs and cheese. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Remove the bake from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
