1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat tortillas

1 cup shredded lettuce

1 1/2 cups shredded cheese (cheddar or pepper jack)

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook until browned and fully cooked through, about 6-8 minutes. Break it apart with a spatula as it cooks.

    Add Aromatics: Once the turkey is cooked, add the diced onion and garlic to the skillet. Sauté for an additional 2-3 minutes until the onion becomes translucent.

      Spice it Up: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to ensure the spices evenly coat the turkey, cooking for another minute.

        Combine Ingredients: Add the black beans, corn, and diced red bell pepper to the skillet. Cook for another 3-4 minutes, allowing the mixture to heat through and the flavors to meld. Remove from heat.

          Assemble the Wraps: On each whole wheat tortilla, layer the shredded lettuce, turkey and black bean mixture, shredded cheese, and avocado slices.
