1 avocado (diced)

½ cup cherry tomatoes (halved)

¼ cup red onion (finely chopped)

1 jalapeño (thinly sliced, optional for heat)

½ cup cilantro (chopped)

1 lime (juiced)

¼ cup olive oil

1 teaspoon cumin

1 teaspoon chili powder

Prepare the Base: In a large mixing bowl, combine the chopped romaine lettuce with the cooled quinoa. Toss well to mix.

Add the Vegetables: Stir in the black beans, corn, diced red bell pepper, avocado, cherry tomatoes, red onion, and jalapeño if using. Mix gently to avoid mashing the avocado.

Combine and Serve: Pour the dressing over the salad and toss gently to coat all ingredients evenly.
