Southwest Chicken Salad

Ingredients
  

2 cups cooked chicken breast, shredded (can use rotisserie chicken)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned, frozen, or fresh)

1 cup cherry tomatoes, halved

1 avocado, diced

1 red bell pepper, diced

1 cup shredded romaine lettuce

1/2 cup red onion, thinly sliced

1/4 cup cilantro, chopped

1 cup shredded cheddar cheese

1/4 cup lime juice (freshly squeezed for best flavor)

1/4 cup olive oil

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Optional: tortilla strips for crunch

Instructions
 

In a large mixing bowl, combine the shredded chicken, black beans, corn, cherry tomatoes, avocado, red bell pepper, lettuce, red onion, and cilantro. Toss gently to mix.

    In a separate small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper. Adjust seasonings to taste. This dressing will add a zesty flavor to the salad.

      Pour the dressing over the salad mixture and toss until everything is well coated.

        Once mixed, gently fold in the shredded cheddar cheese, being careful not to mash the ingredients.

          If desired, serve the salad topped with crispy tortilla strips for added texture.

            Divide the salad into bowls or plates and enjoy immediately, or refrigerate for up to 2 hours if preparing in advance.
