Sour Cream and Onion Potato Casserole

4 medium-sized russet potatoes, thinly sliced

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 large onion, thinly sliced

3 tablespoons butter

2 cloves garlic, minced

1 teaspoon salt (or to taste)

½ teaspoon black pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1 cup crushed French fried onions (for topping)

Fresh chives, finely chopped (for garnish)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Onions: In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 10-15 minutes. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.

      Mix Sauce: In a mixing bowl, combine sour cream, shredded cheddar cheese, onion powder, garlic powder, salt, and pepper. Stir until well blended.

        Layer Potatoes: In a greased 9x13 inch baking dish, layer half of the sliced potatoes evenly across the bottom.

          Add Toppings: Spread half of the sour cream mixture over the potatoes, followed by half of the sautéed onions. Repeat with the remaining potatoes, then the remaining sour cream mixture, and top with the rest of the sautéed onions.

            Bake: Cover the dish with aluminum foil and bake for 45 minutes. Then remove the foil and sprinkle the crushed French fried onions on top. Bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown and crispy.

              Let It Rest: Once baked, let the casserole sit for about 10 minutes before serving. This will help it set and make serving easier.

                Garnish: Before serving, sprinkle with fresh chives for added flavor and a pop of color.
