4 ears of fresh corn, husked

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground chipotle pepper (adjust to your spice preference)

1/2 teaspoon garlic powder

Salt and black pepper to taste

1/2 cup mayonnaise

1/2 cup crumbled cotija cheese (or feta)

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice (about 1 lime)

1 avocado, diced (for topping)

Lime wedges (for serving)

Instructions
 

Grill the Corn: Preheat your grill to medium-high heat. Lightly brush the husked corn with olive oil and season with smoked paprika, chipotle pepper, garlic powder, salt, and black pepper.

    Roast the Corn: Place the corn on the grill and cook for about 10-15 minutes, turning occasionally until all sides are charred and cooked through. You want a nice smoky flavor and a slight char on the kernels.

      Cut the Kernels: Once the corn is cooked, remove it from the grill. Let it cool for a few minutes, then use a sharp knife to cut the kernels off the cob and place them in a mixing bowl.

        Make the Sauce: In another bowl, combine the mayonnaise, lime juice, half of the cotija cheese, and half of the chopped cilantro. Mix well to create a creamy dressing.

          Combine Ingredients: Add the grilled corn to the sauce mixture and gently fold until all the corn is well-coated. Tastes, and adjust seasoning with more salt, chipotle pepper, or lime juice if needed.

            Assemble the Cups: In small cups or bowls, layer the smoky chipotle corn mixture. Top with diced avocado, the remaining cotija cheese, and a sprinkling of cilantro.

              Serve: Garnish each cup with a lime wedge on the side for squeezing. Enjoy warm or at room temperature.
