2 lbs baby potatoes

1 cup grated Parmesan cheese

1 cup all-purpose flour

1 tsp baking powder

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

2 large eggs

1 cup buttermilk (or regular milk with 1 tbsp vinegar added)

4 tbsp unsalted butter, melted

½ cup chopped fresh chives (optional for garnish)

Sour cream or Greek yogurt (for serving)

Instructions
 

Boil the Potatoes: In a large pot, add the baby potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes or until fork-tender. Drain and allow to cool slightly.

    Prepare the Waffle Maker: Preheat your waffle maker according to the manufacturer’s instructions. If needed, lightly grease it with cooking spray.

      Smash the Potatoes: Once the potatoes are cool enough to handle, smash them gently with a fork or potato masher, leaving some chunks for texture.

        Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper.

          Combine Wet Ingredients: In another bowl, whisk together the eggs, buttermilk, and melted butter.

            Combine Mixtures: Pour the wet ingredients into the dry mixture and stir gently until just combined. Fold in the smashed potatoes and half of the grated Parmesan cheese.

              Cook the Waffles: Spoon an appropriate amount of the potato batter into the preheated waffle maker (about ½ to ¾ cup, depending on the size of your waffle maker) and close the lid. Cook until the waffles are golden brown and crisp, about 5-7 minutes. Repeat with the remaining batter.
