Slow Cooker Pulled Pork Sandwiches

4 pounds pork shoulder (also known as pork butt)

1 tablespoon olive oil

1 cup onion, finely chopped

4 cloves garlic, minced

1 cup barbecue sauce (your favorite brand)

1/2 cup apple cider vinegar

1/2 cup chicken broth

1 tablespoon brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

6 hamburger buns

Coleslaw (for topping, optional)

Instructions
 

Prep the Pork: Begin by trimming any excess fat from the pork shoulder and then patting it dry with paper towels. This helps the seasoning adhere better.

    Sear the Pork: In a large skillet, heat the olive oil over medium-high heat. Add the pork shoulder and sear on all sides until browned (about 4-5 minutes per side). This step is optional but adds flavor to your dish.

      Caramelize Onions & Garlic: In the same skillet, add chopped onions and sauté for about 2-3 minutes until softened. Then toss in the minced garlic and sauté for another minute, until fragrant. Remove from heat.

        Mix the Sauce: In a bowl, whisk together the barbecue sauce, apple cider vinegar, chicken broth, brown sugar, Worcestershire sauce, smoked paprika, cumin, chili powder, salt, and pepper.

          Combine Ingredients in Slow Cooker: Place the seared pork shoulder into the slow cooker. Pour the caramelized onions and garlic over the pork, followed by the barbecue sauce mixture.

            Cook Low and Slow: Cover and cook on low for 8 hours or on high for 4 hours. The pork is ready when it easily shreds with a fork.

              Shred the Pork: Once done, remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat. Return the shredded pork back to the slow cooker and mix it with the juices.

                Prepare the Buns: Toast the hamburger buns lightly. If desired, you can butter them and give them a quick toast under the broiler for extra flavor.

                  Assemble the Sandwiches: Pile generous amounts of the pulled pork onto the bottom half of each bun. Top with coleslaw if you like, then place the top bun on.
