Ingredients

1 lb boneless, skinless chicken breasts

1 cup wild rice, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, diced

3 celery stalks, diced

1 cup sliced mushrooms

6 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

1 cup heavy cream or coconut milk (for a dairy-free option)

2 tablespoons fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional)

Instructions

Prep the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker, ensuring they lie flat to cook evenly.

Add Wild Rice: Spread the rinsed wild rice evenly over the chicken for a flavor-packed base.

Layer the Vegetables: Add the diced onion, minced garlic, diced carrots, diced celery, and sliced mushrooms over the rice.

Pour the Broth: Carefully pour in the low-sodium chicken broth, making sure all the ingredients are submerged.

Season: Sprinkle in the dried thyme, dried rosemary, bay leaf, salt, and black pepper. Stir gently to combine, but be careful not to disturb the chicken at the bottom.

Set the Slow Cooker: Cover and set your slow cooker to low for 6-8 hours or on high for 3-4 hours, depending on your schedule.

Shred the Chicken: Once cooked, remove the chicken breasts carefully from the slow cooker. Use two forks to shred the chicken into bite-sized pieces.

Return the Chicken: Return the shredded chicken to the soup, stirring to combine everything well.

Stir in Cream: Mix in the heavy cream or coconut milk to add a creamy texture, and heat through for an additional 30 minutes on low.

Finish with Freshness: Just before serving, stir in fresh lemon juice for added brightness, if desired, and garnish with chopped fresh parsley.

Serve: Ladle the warm soup into bowls, and enjoy the comforting flavors of your homemade chicken and wild rice soup!
