Once your chicken has finished cooking in the slow cooker, it’s time to shred it. Shredding chicken may seem like a simple task, but there are a few techniques you can employ to ensure you achieve perfect, tender shreds without much effort.

Slow Cooker Chicken Alfredo with Broccoli

1.5 lbs boneless, skinless chicken breasts

2 cups broccoli florets (fresh or frozen)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

12 oz fettuccine pasta (uncooked)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of your slow cooker. Season them with salt, pepper, and Italian seasoning.

    Create the Sauce: In a mixing bowl, combine heavy cream, chicken broth, minced garlic, and Parmesan cheese. Whisk together until well combined.

      Combine Ingredients: Pour the creamy sauce mixture over the chicken in the slow cooker.

        Cook: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

          Add Broccoli: About 30 minutes before serving, add the broccoli florets to the slow cooker and gently stir to combine.

            Cook the Pasta: About 15 minutes before you’re ready to eat, cook the fettuccine according to package instructions in a pot of boiling salted water. Drain and reserve a little pasta water.

              Shred the Chicken: Once the chicken is cooked, remove it from the slow cooker, shred it with two forks, and return it to the slow cooker. Stir to coat in the creamy sauce.

                Combine Pasta & Sauce: Add the cooked fettuccine to the slow cooker, tossing it with the creamy sauce. If the mixture seems too thick, add a bit of the reserved pasta water to reach your desired consistency.

                  Serve: Scoop the creamy chicken Alfredo with broccoli onto plates. Garnish with freshly chopped parsley and extra Parmesan cheese if desired.
