Slow Cooker Balsamic Chili

1 medium onion, diced

2 cans (15 oz each) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (14.5 oz) diced tomatoes (with juices)

2 cups vegetable or beef broth

1/2 cup balsamic vinegar

2 tbsp tomato paste

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp salt (adjust to taste)

1/2 tsp black pepper

1/4 tsp crushed red pepper flakes (optional for heat)

Fresh cilantro or parsley for garnish

Shredded cheese (for serving, optional)

Chopped green onions (for serving, optional)

Instructions
 

Brown the Beef: In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain excess fat if necessary and transfer the beef to the slow cooker.

    Sauté Aromatics: In the same skillet, add a splash of olive oil and sauté the onions, garlic, and bell pepper for about 5 minutes until they soften and become fragrant. Transfer this mixture to the slow cooker.

      Combine Ingredients: In the slow cooker, add the black beans, kidney beans, diced tomatoes, vegetable or beef broth, balsamic vinegar, tomato paste, chili powder, cumin, smoked paprika, salt, black pepper, and crushed red pepper flakes (if using).

        Mix Well: Stir all the ingredients together until well combined and ensure the spices are evenly distributed.
