Ingredients

3 lbs beef chuck roast

1 tablespoon olive oil

2 onions, chopped

4 cloves garlic, minced

1 cup beef broth

1 (14 oz) can diced tomatoes with green chilies

1 tablespoon smoked paprika

2 teaspoons ground cumin

2 teaspoons chili powder

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 tablespoon brown sugar

2 tablespoons apple cider vinegar

Juice of 1 lime

Corn tortillas, for serving

Fresh cilantro, chopped (for garnish)

Diced red onion (for garnish)

Slices of avocado (optional)

Instructions

Prepare the Beef: Start by patting the beef chuck roast dry with paper towels and seasoning it generously with salt and pepper. This helps to enhance the flavor during cooking.

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the beef roast and sear it on all sides until browned (about 3-4 minutes per side). This step adds depth of flavor.

Add Aromatics: Remove the seared beef from the skillet and transfer it to a slow cooker. In the same skillet, add the chopped onions and garlic. Sauté for about 2-3 minutes until fragrant and softened.

Combine Ingredients: Pour the sautéed mixture over the beef in the slow cooker. Next, add the beef broth, diced tomatoes with green chilies, smoked paprika, cumin, chili powder, oregano, brown sugar, and apple cider vinegar. Stir well to combine all the ingredients.

Slow Cook: Cover the slow cooker with the lid and cook on low for 8-10 hours, or on high for 4-5 hours, until the beef is tender and easily shredded with two forks.

Shred the Beef: Once cooked, take the beef out of the slow cooker and place it on a cutting board. Shred the meat using two forks, discarding any excess fat. Return the shredded beef to the slow cooker and mix it well with the cooking liquids for extra flavor.

Prepare Tacos: Warm the corn tortillas in a skillet or on a grill until pliable. Then, fill each tortilla with the pulled beef mixture.

Garnish: Top the tacos with chopped cilantro, diced red onion, and slices of avocado if desired. Squeeze fresh lime juice over the top for an added zing.

Serve and Enjoy: Serve the tacos warm with extra lime wedges on the side.
