1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

3 cloves garlic, minced

1 small red bell pepper, finely chopped

1 cup water chestnuts, diced

1/2 cup fresh blueberries

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 tablespoon fresh ginger, grated

Salt and pepper to taste

1 head of butter lettuce, leaves separated

Chopped scallions and sesame seeds for garnish

Prepare the Blueberry Glaze: In a small saucepan over medium heat, combine the fresh blueberries, honey, soy sauce, rice vinegar, and a pinch of salt. Cook for about 5-7 minutes, stirring gently until the blueberries burst and the sauce thickens slightly. Strain the mixture through a fine-mesh sieve, pressing on the solids to extract as much liquid as possible, then set the glaze aside.

    Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).

      Add Vegetables: Stir in the chopped red bell pepper and diced water chestnuts. Cook for another 2-3 minutes until the vegetables are softened.

        Cook the Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 3-5 minutes or until the shrimp are pink and opaque. Pour half of the blueberry glaze over the shrimp and stir well to coat.
