Shrimp Dirty Rice

1 lb large shrimp, peeled and deveined

1 ½ cups long-grain rice

3 cups chicken broth

1 medium onion, finely chopped

2 stalks celery, finely chopped

1 green bell pepper, finely chopped

4 cloves garlic, minced

1 tsp Cajun seasoning (adjust to taste)

½ tsp smoked paprika

1 tsp dried thyme

½ tsp black pepper

¼ tsp cayenne pepper (optional for heat)

4 oz andouille sausage, diced

2 tbsp olive oil

1 cup green onions, sliced (for garnish)

½ cup fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, bring the chicken broth to a boil. Stir in the rice, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.

    Cook the Sausage: In a large skillet or Dutch oven, heat olive oil over medium heat. Add the diced andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the chopped onion, celery, and bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

        Add Seasonings: Stir in the Cajun seasoning, smoked paprika, thyme, black pepper, and cayenne (if using). Allow the spices to bloom for 1-2 minutes.

          Combine Shrimp and Sausage: Add the shrimp to the skillet and cook for about 3-4 minutes until they turn pink and opaque. Return the cooked sausage to the skillet, stirring to combine all ingredients.

            Mix in Rice: Gently fold the cooked rice into the shrimp mixture, ensuring everything is evenly distributed. Taste and adjust seasoning with salt, if necessary.

              Add Fresh Herbs: Remove the skillet from heat and fold in the chopped fresh parsley. Garnish with sliced green onions.

                Serve: Spoon out generous portions of the Shrimp Dirty Rice onto plates or into bowls. Enjoy hot, paired with a wedge of lemon for a zesty finish, if desired.
