1 pound large shrimp, peeled and deveined

1 large cucumber

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Paprika for garnish

Fresh dill sprigs for garnish

Instructions
 

Prep the Shrimp: In a medium bowl, combine the shrimp, garlic powder, onion powder, salt, and pepper. Toss to coat the shrimp evenly with the spices.

    Cook the Shrimp: Heat a skillet over medium heat and add a splash of olive oil. Once hot, add the shrimp and sauté for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and let cool.

      Make the Filling: In a separate bowl, mix together the softened cream cheese, Greek yogurt, chopped dill, lemon juice, and a pinch of salt and pepper. Blend until smooth and well combined.

        Prepare the Cucumber: Slice the cucumber into approximately 1-inch thick rounds. If needed, you can slice the ends off to create a flat base for stability.

          Assemble the Cups: Take each cucumber round and use a small melon baller or spoon to carefully hollow out a portion of the center, creating a small cup that can hold the filling.

            Fill the Cups: Use a piping bag or a small spoon to carefully fill each cucumber cup with the cream cheese mixture.

              Top with Shrimp: Once all cups are filled, place a cooked shrimp on top of the filling in each cucumber cup.

                Garnish: Sprinkle paprika over the shrimp for a touch of color and garnish with small sprigs of fresh dill.

                  Chill & Serve: Place the assembled cucumber cups in the refrigerator for about 30 minutes to chill and set. Serve cold as a refreshing appetizer.
