Ingredients

1 pound large shrimp, peeled and deveined

1 pound baby potatoes, halved

1 pound corn on the cob, cut into thirds

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon Old Bay seasoning

Juice of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat your grill or oven to 400°F (200°C).

Prepare the foil packs: Cut four large pieces of aluminum foil, about 12 inches long. You will create individual packs for each serving.

Mix the seasoning: In a bowl, combine the olive oil, minced garlic, Old Bay seasoning, lemon juice, salt, and pepper. Stir well to make a marinade.

Assemble the packs: On each piece of foil, place equal portions of halved baby potatoes, corn, and shrimp. Drizzle the marinade over each portion, ensuring everything is well-coated.

Seal the packets: Fold the foil over the ingredients and fold the edges tightly to seal. Make sure there are no openings, as you want to keep the steam in.

Cook the foil packets: Place the packets on the grill or in the oven. If grilling, cook for 15-20 minutes, and if using the oven, cook for 20-25 minutes, or until shrimp is pink and potatoes are tender.

Serve: Carefully open the packets (watch out for steam!) and sprinkle with fresh chopped parsley. Serve with lemon wedges on the side for an extra zing.
