1 large cucumber

1 ripe avocado

8 oz cooked shrimp, peeled and deveined

1 tablespoon olive oil

1 tablespoon fresh lime juice (plus extra for garnish)

1 garlic clove, minced

1/4 cup red onion, finely chopped

1/4 cup cherry tomatoes, diced

2 tablespoons fresh cilantro, chopped

Salt and pepper to taste

Optional: Sliced jalapeños for a spicy kick

Prepare the Cucumber: Cut the cucumber in half lengthwise. Using a spoon, carefully scoop out the seeds to create a hollow boat, leaving a sturdy base for stuffing. Set aside.

    Make the Shrimp Filling: In a medium bowl, combine the cooked shrimp, olive oil, lime juice, minced garlic, red onion, cherry tomatoes, cilantro, salt, and pepper. Gently toss everything together until well mixed. Adjust seasoning with additional lime juice, salt, or pepper as necessary.

      Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash it lightly with a fork, adding a pinch of salt and a squeeze of lime juice to preserve its color.

        Assemble the Boats: Spread a layer of mashed avocado along the bottom of the hollowed cucumber halves. Top generously with the shrimp mixture, ensuring an even distribution.
