1 lb (450g) ground chicken

1 tbsp sesame oil

2 cloves garlic, minced

1 inch fresh ginger, grated

1/4 cup low-sodium soy sauce

1 tbsp rice vinegar

2 tbsp honey or maple syrup

1 cup shredded carrots

1 bell pepper, diced (any color)

1/4 cup green onions, chopped

1/4 cup chopped cilantro (optional)

1 head of lettuce (Butter or Romaine works best)

Sesame seeds for garnish

Chopped peanuts (optional, for added crunch)

Instructions
 

Cook the Chicken: In a large skillet, heat the sesame oil over medium-high heat. Add the ground chicken and cook until browned, breaking it apart with a spatula, for about 5-7 minutes.

    Add Aromatics: Once the chicken is nearly cooked, add the minced garlic and grated ginger. Sauté for another 2-3 minutes until fragrant.

      Create the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, and honey or maple syrup. Pour the mixture over the chicken and stir well to coat. Let it simmer for an additional 5 minutes, allowing the flavors to meld.

        Incorporate Veggies: Mix in the shredded carrots, diced bell pepper, green onions, and chopped cilantro (if using). Stir continuously for about 2-3 minutes until the vegetables are slightly softened but still vibrant.

          Prepare the Lettuce Wraps: While the filling is cooking, wash and dry the lettuce leaves. Gently separate the leaves, ensuring they remain intact for wrapping.

            Assemble the Wraps: To serve, spoon a generous amount of the chicken mixture onto the center of a lettuce leaf. Sprinkle with sesame seeds and chopped peanuts if desired. Wrap it like a burrito, making sure to fold the sides in.
