1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/3 cup chocolate chips (optional)

1/4 cup melted coconut oil (or unsalted butter)

1 large egg

Prepare the Zucchini: Start by washing the zucchini thoroughly. Grate it using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and twist to remove excess moisture. Set it aside.

    Preheat the Oven: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, rolled oats, brown sugar, granulated sugar, baking soda, baking powder, cinnamon, nutmeg, and salt until evenly combined.

        Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, egg, and vanilla extract until well blended.

          Combine Mixtures: Add the wet ingredients to the dry ingredients. Stir until just combined. Be careful not to overmix. Fold in the shredded zucchini, and if using, the chopped nuts and chocolate chips.
